Sunday Supper #3

I realize I've been lacking in my coverage of the "Sunday Supper" feature. Forgetfulness, not-picture-worthy dishes and a general lack of excitement for cooking lately are all contributing factors. Now that fall is here, I'm trying to cook more.
I'm still trying to hit the farmers' market as often as I can. Like most people, I'm also trying to be more frugal in my buying habits as well as having more meatless meals.
Squash is one of our favorites here at Fartwood Manor. Most of the time I just bake an acorn squash with some brown sugar. Kabocha squash is another favorite--I love it in tempura. It is denser than other squash and has a mellow, earthy flavor.
I found this tasty recipe for Squash and Black Bean Stew on Epicurious. Aside from cutting the Kabocha squash (BE CAREFUL!) it is really easy, and I recommend peeling and baking the squash first and adding it at the end just to warm through.

Thanks GR! I'd love to deliver, but I think it might get a tad cold by the time I get there.
You should give this one a try.

You are an adventurous cook!--are you sure you grew up in Wisconsin???? *smiles*

(My Mom cooks pizzaburgers with spam. That's the most exciting dish she makes. :) )

MHP--I think the reason why I'm an adventurous cook is BECAUSE I grew up in WI. My mom had a good, but limited repertoire of the standard meat-and-potatoes Midwestern menus. During high school I started being interested in all these things we didn't have at home. Once I got out on my own, I was always on the lookout for new and different foods and cuisines to try. Moving to CA really enabled me to have some pretty interesting culinary experiences.
I really have to know what exactly is your Mom's pizzaburger!

I will ask my Mom for her pizzaburger recipe. I actually like them, spam and all. :)

My next door neighbor is growing this kind of squash. It is just exploding all over her back yard...but I will see if she wants this recipe because it looks delicious.

Thanks for visiting Maria! This is a really yummy squash--maybe your neighbor will give you one and you can check the recipe yourself!
